Inactivación de cronobacteria sakazakii en formulación de leches infantiles. (Inactivation of Cronobacter sakazakii in milk infant formulas)


A Spanish public research organisation has developed a process based on the Pulse Electric Fields (PEF) technology to inactivate Cronobacter sakazakii in milk infant formulas, supplemented with cocoa. The product obtained has higher nutritional value and organoleptic quality than using a UHT process. After the PEF process, cocoa rich in phenols is added, acting as ingredient and as antimicrobial.
